A family project rooted in genuine passion

The story of the Borgo is closely tied to the Crotti family. What began as a personal passion of the parents for producing traditional Aceto Balsamico was developed by sisters Cristina and Silvia Crotti into a professional manufactory . Through this evolution, the original commitment remained intact: quality over quantity, craftsmanship over industry.

At the heart of it all is the Acetaia, the vinegar manufactory, where the Balsamico matures in wooden barrels over many years. The base ingredient is exclusively cooked grape must from regional varieties such as Trebbiano and Lambrusco. The production follows strict traditional methods that demand time and experience. What emerges here is no everyday product, but rather a concentrated expression of the region, deep, complex, and of remarkable elegance.

Staying in a historic atmosphere

Complementing the manufactory is the guesthouse "Le Dimore del Borgo," which blends seamlessly into the historic parkland setting. Nine individually designed rooms are distributed between a landmark-protected villa and a traditional farmhouse, along with a spacious three-room apartment. The décor combines antique elements with contemporary design, creating an atmosphere that feels both refined and personal.

Breakfast is served in the open loggia overlooking the garden. Homemade and locally sourced products set the tone for the day, accompanied by the quiet expanse of the estate. The park, with its mature trees, lush blooms, and carefully trimmed box hedges, conveys a sense of seclusionwithout feeling isolated. A private pool fits unobtrusively into this setting, making the Borgo a place where a slower pace of life sets in almost naturally.

A glimpse into a rare craft

An essential part of any stay is the guided tour of the vinegar manufactory, which is already included in the room rate. It offers a tangible understanding of how a simple grape must gradually becomes a fine balsamic vinegar over the course of many years. Guests gain not only insight into the production steps, but also an appreciation for the patience and care this product demands.

At the same time, the estate itself remains a tranquil retreat that deliberately steers clear of any sense of rush.

The result is a compelling contrast that is characteristic of the Emilia-Romagna : intense culinary experiences on one side, quiet, almost contemplative landscapes on the other.
