What sets the Caprese di Bufala Campana apart from other variations is the exceptional mozzarella made from the milk of Italian water buffalo. Authentic Mozzarella di Bufala Campana DOP may only be produced in specific regions of southern Italy, in Campania, particularly in the provinces of Caserta, Salerno, and Benevento, as well as in parts of Lazio. This DOP designation (Denominazione di Origine Protetta) guarantees not only the product's origin but also traditional production methods passed down through generations. Even as it is sliced, the Mozzarella reveals its freshness: a delicate, milky liquid escapes, tender and fragrant. Its flavor is gentle, slightly tangy, with a subtle sweetness that lingers on the palate.

Recipe: Caprese di Bufala Campana

Ingredients (serves two)

  • 250 g Mozzarella di Bufala Campana DOP (ideally fresh)
  • 250 g ripe cherry tomatoes or vine tomatoes
  • A bunch of fresh basil
  • 2–3 tbsp extra virgin olive oil
  • Sea salt to taste
  • Freshly ground black pepper
  • Optional: a few drops of balsamic vinegar or a pinch of oregano

Preparation

  1. Wash the tomatoes and slice or halve them, depending on their size.
  2. Slice the mozzarella or tear it into pieces and let it drain briefly.
  3. Arrange the tomatoes and mozzarella alternately on a plate and garnish with fresh basil leaves.
  4. Drizzle with olive oil and season with sea salt and freshly ground pepper.
  5. Optionally, add a touch of balsamic vinegar or oregano for extra flavor.

Serving suggestion

Caprese di Bufala Campana tastes best when all the ingredients are at room temperature. This allows the flavors to develop fully. Serve the salad with fresh ciabatta or a glass of white wine.
